Glycation stress caused by advanced glycation end-products (AGEs) is known to significantly impact skin tone. In particular, the glycation of dermal proteins, such as collagen and elastin, has been shown to contribute not only to skin stiffening and wrinkles but also to a yellowish, dull complexion.
Recent studies have reported that proteins in the stratum corneum also undergo glycation. This process is thought to delay epidermal turnover, leading to progressive skin dullness and a consequent loss of skin translucency.
The inhibitory effect of pineapple ceramide on AGE formation in stratum corneum proteins has been reported. To evaluate its effect on dermal components, Type I collagen was incubated with ribose, a sugar, to induce glycation in the presence of pineapple ceramide. After a two-week incubation period, the resulting AGEs were detected by ELISA using an anti-AGE antibody.

- Born in Gunma Prefecture in 1965, he completed his doctoral studies at the Graduate School of Agricultural Science at Tokyo University of Agriculture (PhD), and served as a special research fellow at the Japan Society for the Promotion of Science, a part-time lecturer at Tokyo University of Agriculture, and an associate professor and professor at Takasaki University of Health and Welfare before becoming a professor at Tokyo University of Agriculture in April 2012. He is a professor at the same graduate school, and will be the president of Tokyo University of Agriculture in April 2021. He will be the chairman of Tokyo University of Agriculture in July 2023.
